While the crayfish are cooling, prepare the other ingredients. Slice the tropea onion thinly and halve the cherry tomatoes. Once the crayfish have cooled, remove the meat from the shells and place it in a large mixing bowl. Add the sliced tropea onion and halved cherry tomatoes to the bowl with the crayfish. Drizzle the mixture with extra virgin olive oil and squeeze fresh lemon juice over the top. Season the dish with salt to taste and gently toss everything together until well combined. Once all the ingredients are mixed, cover the bowl and let the flavors marinate for at least 30 minutes to allow the flavors to meld together. Once the dish has marinated, give it a final toss and adjust the seasoning if necessary.
